INSIDE CATERING LTD was founded by Paul McIntyre in 2004. Paul has been in catering since 1985, when he was 13 working in his own family restaurant. Following this he served a three-year apprenticeship in a French restaurant in Lytham St Anne's, Lancashire, where he became a rising star in hotels and restaurants in the north west of England. Paul was the youngest senior sous chef in the area at the very young age of 20. By the age of 24 he was an executive chef running nine restaurants and one of the North West's largest conference and banquet facilities, which regularly held large dinners for royalty, governments and also band/press launches. Paul then spent eight years travelling the world from the top of Canada through north and South America, Asia, Africa and Europe, where he collected a wealth of knowledge of tastes and cultures.
Paul says: "In terms of food preparation, flavours and presentation, I am very British and rustic in my approach. I believe food should be well-balanced and flavours not disguised with heavy spicing and seasoning. I use very traditional cooking methods for meats to ensure slow development of flavours and resting, thus ensuring succulent textures. Most of the ingredients I use are sourced from the local area and, where possible, hand-picked to ensure freshness and quality. The hogs I use for our fantastic hog roasts are reared locally for their quality and are from assured British pig farmers. The hog roasts and barbecues are always a main attraction at all of our outside catering and hog roast events. The hogs are mounted on a self-basting rotisserie; our hog roast machines are custom-made in South Africa using the latest hog roasting technology in heat distribution. When catering for your hog roast and providing your spit roast, it is important to know you are in safe and reliable hands! We have over 21 years in the outside catering industry and have cooked thousands of hog roasts and lamb roasts, barbecues and have catered at major events. The hog roast cooks as well outdoors as inside and can be used for almost any type of event, no matter how big. The most delicious hog roast with the best crunchiest crackling you have ever tasted will be cooked for you by vastly experienced hog roast 'piggy' chefs, who have experience in hog roasts, lamb roasts and all other spit-roast animals. We are able to offer a variety of alternative meats for bbqs, such as whole lambs, goats, pigs or wild boar - you choose! We supply and cook onsite so our hog roasts are moist and tender. The diversity of the food we offer means we can cater for your every need or desire.
